Serves 4
INGREDIENTS:
4 Tablespoons butter
3 Tablespoons medium brown sugar
2 teaspoons ground cinnamon, divided
1 ripe mango or 1 large peach, pitted, peeled and julienned
1 egg, beaten
½ cup Greek-style yogurt
2/3 cup all-purpose flour
½ teaspoon double-acting baking powder
¼ teaspoon baking soda
¼ teaspoon sea salt
2 Tablespoons confectioner’s sugar, divided
1 + Tablespoons butter
DIRECTIONS:
Melt 4 Tablespoon butter over medium heat and remove and reserve 1 Tablespoon of butter.
Add brown sugar and 1 ½ teaspoons cinnamon, stirring until smooth. Add mango or peaches and cook in the sugar syrup till tender and glazed. Remove from heat.
In a large bowl, mix together beaten egg, yogurt and the reserved 1 Tablespoon of melted butter.
In another bowl, sift together the flour, baking powder, baking soda, salt and 1 Tablespoon of confectioner’s sugar.
Add dry ingredients to the wet, and blend until thoroughly mixed. Add the glazed fruits and syrup and mix into the batter gently.
On a hot griddle or in a small hot skillet, melt 1 Tablespoon of butter. With a large spoon, drop batter onto skillet and cook until bottom is lightly browned. Turn and brown remaining side.
Repeat until batter is used up. Rebutter the skillet or griddle as needed.
Mix remaining 1 Tablespoon confectioner’s sugar and ½ teaspoon of cinnamon together. Sprinkle over pancakes and serve immediately. |
