INGREDIENTS:
4 ounces Parmesan cheese
1 ½ teaspoon freshly grated lemon peel
¼ cup cold butter in slices
¾ cup all-purpose flour
¼ teaspoon freshly ground pepper
2 Tablespoon cold water
Sea salt
Julienned strips of lemon peel, cut in ½-inch lengths
DIRECTIONS:
Cut Parmesan into chunks and place in food processor. Chop fine. Add lemon peel, cold butter, flour and pepper and process a few times. With machine running, add cold water just until mixture binds together.
Preheat oven to 400 degrees
Shape mixture into a ball and place between two sheets of parchment paper. Roll dough into a 12-inch square. Remove top piece of parchment and invert dough onto a cookie sheet. Remove last piece of parchment.
With a knife, pastry cutter or pizza wheel, cut ½-inch wide strips, or 1 ½ x 2-inch rectangles. With a spatula, lift and separate dough one inch apart. Prick dough with a fork and sprinkle with julienned lemon and salt. Slightly press in.
Bake 10-12 minutes till lightly golden. Remove and cool on the baking sheet. |
