Makes approximately 8 flat breads
INGREDIENTS:
2 cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon sea salt
¾ cup Greek-style yogurt, at room temperature
¼ cup melted butter
Coconut oil
DIRECTIONS:
In a large bowl, sift the flour, soda and salt together. Add yogurt such that the dough is firm but workable. Knead for several minutes and then cover with a cloth.
Let dough rest at room temperature for 15 minutes.
Pinch off enough dough to form 2-inch balls. Roll out each ball till ½ inch thick. Brush each piece with melted butter. Fold each piece in on itself till a ball is formed again. Roll out each ball again, this time to 1/8-inch thick.
Cook thin dough pieces on hot griddle.
Brush each side with melted butter and turn often till golden brown on both sides. Serve warm. |
