2 cups all-purpose flour
1 Tablespoon baking powder
½ teaspoon baking soda
2 Tablespoons unsweetened cocoa powder
6 Tablespoons firmly packed dark brown sugar
½ teaspoon ground allspice
2 ounces unsweetened dark chocolate
Zest of 1 orange
1 egg, lightly beaten
1 cup whole milk
Special equipment: a muffin tin with 12 (1/2-cup) muffin cups
DIRECTIONS:
Preheat oven to 400 degrees.
Sift together the flour, baking powder, soda, cocoa, brown sugar and allspice in a large bowl.
Crush the chocolate and mix into the bowl, adding the orange zest.
Gently beat the eggs and milk till just blended and add to dry mixture.
Spoon the mixture into 12 paper muffin cups.
Place the cups in the muffin tray and bake for 15 minutes till risen and firm.
