INGREDIENTS:
4 eggs
¾ cup coconut oil
1 ¼ cups sugar
¼ cup unsulphured molasses
1 ½ cups cooked squash of your choice
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon Sea salt
½ teaspoon each ginger, nutmeg, cloves
Frosting:
2-3 ounces cream cheese
2 Tablespoons soft butter
1 teaspoon each orange juice, orange zest, milk
2 cups powdered sugar
DIRECTIONS:
In large mixer bowl beat together eggs,oil,sugar,molasses and squash. Sift together dry ingredients. Add dry ingredients to squash mixture. Beat until smooth.
Pour into greased and floured jellyroll pan or 2-9inch square pans. Bake 350 degrees for 35minutes or until toothpick comes out clean. Cool.
Beat icing ingredients together until fluffy and smooth: cream cheese,butter,orange juice, orange peel, milk and powdered sugar. Spread frosting evenly.
Cut into bars. |
