Makes approximately 6 dozen cookies
INGREDIENTS:
½ lb. butter
1 ¼ cups sugar
½ cup Greek-style yogurt
2 teaspoons double-acting baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
3 cups all-purpose flour
1 egg, beaten
1 Tablespoon cold water
1 cup sesame seeds
DIRECTIONS:
Preheat oven to 350 degrees.
Whip butter with a fork until it is fluffy and light. Slowly add in the sugar until it is well blended.
Add yogurt, baking powder, baking soda, and cinnamon. Mix thoroughly. Stir in the flour a little at a time until the dough is soft.
With floured hands, break off a small pieces of dough, all approximately the same size. With each piece, roll the dough into 5-inch long, 3/8-inch thick ropes - with your hands. Form a circle with each rope and join the ends together, forming ring-shaped cookies.
In a small bowl, beat the egg, and add the water. Mix.
With a pastry brush, brush each cookie with the egg mixture, and then dip the cookie onto a plate of sesame seeds: coat each cookie on all sides.
Place ring-shaped cookies on a lightly buttered cookie sheet and bake 15-20 minutes until golden brown. Remove and cool on wire racks. |
