Timesaving and Flavorful Thanksgiving Recipes You’ll Be Thankful For!
Marinated Goat Cheese with Garlic, Mint and Orange Zest

This recipe can be made one week in advance, so if you’re entertaining this Thanksgiving, this is the appetizer to choose! While you attend to other matters, this fabulous, simple and incredibly flavorful appetizer marinates and gets better and better!
Serves 6 to 10 as an appetizer
Ingredients:
1 12-ounce log of soft goat cheese, or 2- to 3-ounce "rounds," chilled
3/4-cup extra virgin olive oil
1-Tablespoon whole peppercorns, "tricolor" mixture
1-teaspoon whole allspice berries
2 cloves garlic, finely minced
2 tablespoons finely minced fresh ginger
1 3 cup slivered fresh mint leaves (or basil or cilantro)
1 teaspoon grated orange zest
Crusty bread or crackers
Pitted Kalamata olives as a side dish
Instructions:
With a thin knife, or even dental floss (we found this the easiest!), cut the goat cheese into 1/2-inch thick slices. (Dip the knife blade in hottest tap water after each cut).
Place each slice in a single layer in a large, shallow dish.
Marinade:
In a small saucepan, combine the oil, peppercorns, and allspice.
In a small bowl, combine the garlic, ginger, mint, and orange zest.
Place the saucepan over medium high heat and cook until the peppercorns begin to "pop," about 2 minutes. Immediately stir in the garlic mixture, which will froth in the hot oil.
Quickly stir once or twice and immediately pour the hot oil mixture over the cheese to marinate.
Cool slightly and cover.
Marinate in the refrigerator at least 3 hours.
(Dish can be completed to this point 1 week prior to serving.)
When the cheese is chilled, transfer the cheese to a decorative plate. Pour the spice filled oil over the top. Serve at room temperature or chilled with crusty bread (to soak up oil) or crackers. Kalamata olives are great as a side dish, or arrange the goat cheese around a bowl of olives in the middle.
Squash Cake Recipe

Squash doesn’t have to be boring! We have a Zingy Squash Cake recipe that you can use for Thanksgiving dessert, Halloween snacks, or a brunch treat for yourself! It’s easy, healthy and tastes fabulous! Kids and guests will think this is cake…not squash!
Ingredients:
3 cups freshly cooked and pureed butternut or acorn squash
4 eggs
1 ¾ cups sugar (may reduce sugar to 1 ¼ cups: it’s still sweet)
1-½ cups warm coconut oil
3 cups flour
1 ½ teaspoon cinnamon
1-teaspoon salt
2-teaspoon baking powder
2-teaspoons baking soda
¾ cup raisins
½ cup walnuts/pecans
Instructions:
At low speed, beat the squash, eggs, sugar, and oil. In another bowl, beat flour, cinnamon, salt, baking soda, and baking powder.Gradually mix together.
When mixed, add raisins and nuts.
Put in tube pan.
Bake at 350°F. degrees for 1 hour.
May frost with honey and powdered sugar, whip some real cream, or leave plain.
Makes a great breakfast bread, or healthy snack.
Flavor and Tenderness Marinade
No matter whether you are serving turkey, chicken, lamb, duck, pork or quail this Thanksgiving, this is an easy way to Marinate in Flavor and Tenderness! Mix up this marinade two to three days before the big day and let the meat soak up its goodness!
Ingredients:
½ cup fresh rosemary leaves
4 garlic cloves
2 teaspoons fresh orange zest
1 teaspoon Sea salt
1/2-cup extra-virgin olive oil
4 Tablespoons fresh lemon juice
4 Tablespoons fresh orange juice
(If you can find unsprayed lavender buds, add 1 teaspoon to blender/processor)
Instructions:
Coarsely process garlic in a blender or processor.
Process in rosemary (lavender if using), zest and sea salt.
Slowly add the liquids.
Place meat in a ceramic, glass or stainless steel bowl that is just large enough for both the meat and the marinade.
Pour marinade over and turn meat occasionally.
May marinate meat 8-12 hours or up to three days in advance of cooking.
Keep meat and marinade refrigerated.
Baste meat with marinade during cooking, but discard any unused marinade.
