Most of the stew meats that I have eaten have been fatty and even tough or dry, so it was with trepidation that I approached Bison stew meat. Right from the start, the meat looked different: a bright red-maroon, almost no fat, firm, and in chunks of just the right size, I didn’t have to trim or cut, or fuss. A long, slow cook with vegetables and some broth produced unbelievably tender and flavorful meat!
Actually, this is the best stew meat that I have ever had, but then, considering the results that I have had from every cut of bison that I have tested so far, I should not have been surprised at all. The meat arrived frozen in a vacuum-sealed bag and was easy to thaw overnight in the refrigerator. I put the contents of the package directly into the Dutch oven, and time and a low temperature did the rest. I have had several meals from this meat, and each time, the tenderness, flavor and juiciness has been a pleasure. High in protein and CLA, Bison is low in fat. As it tastes just like beef, Bison stew meat is a perfect choice to replace beef in a stew that is slow-cooked with liquid. Totally plains-grass fed, the Bison from this supplier never receive hormones, antibiotics or animal by-products, so you receive only pure and health promoting meat. I can’t compare the quality of this to any other stew meat, because nothing else, in my estimation, comes even close. Fabulous flavor and tenderness, there is not an ounce of waste. Making a fabulous stew doesn’t get easier than this!
